BEST TIRAMISU AND PERFECT BLACK FOREST

early 2012, my best friend came back from australia
and she gave me ADRIANO ZUMBO 'S BOOK
which has been in my wish list
she is the best :)


and i amaze everytime i read his book. what a genius! he's the sexiest man in the kitchen.

and not only that, we spent time for baking together.

like TIRAMISU.

what makes our tiramisu different with other because,
i use a really yummy vanilla cake that moisted with baileys, uhhmmmmm, imagine that? sounds yummy right? but wait, we still going
we made a rich coffee ganache for the 2nd layer. do you smell hot espresso, buddy?
as the 3rd layer, we put cream cheese mix with whipped cream.
wow, how yummy they are! but im not finish yet, this mouth watering layer, i'll put in double. so we have 6 layer of great TIRAMISU plus some lady's fingers and cocoa powder at the top.

if you ask me what my long time favorite cake, i'll say BLACK FOREST.
why? they have a moist chocolate cake, a hint of sourness in the dark cherry, a great smell of rhum, a rich cream, and no other than shaved chocolate.
they are a super duper perfect combination.
but lately, i found difficulty to find a yummy black forest.
until i gave up and decided to make it on my own
and what a surprise, i found my happy moment like i get when i was a child and eat this cake.
so, i wont keep this yummy cake alone, i want to share it with you.

CARROT CUPCAKE with CREAM CHEESE FROSTING

i never eat carrot cake before. i mean the real carrot cake, not singapore's carrot cake that i love :p

so when one of my friend asked about carrot cake, i browsed about this recipe. then i found betty crocker recipe. i made one and asked her to try.

2 days later, she tweeted me : "me likey the carrot cake. The sweetness is subtle but very delicious. I think pecan would work well too. Thank you! :D"

and i realized that i need to improve the recipe. the basic recipe is fine but not good enough, can't be master recipe.
i had carrot cupcakes order for tomorrow, and it's the time for me to improve my recipe. i made some changes and taaaadaaaaaaa, it works! i'm so happy :))))

i love the color, taste, and texture. ohhh, i start like carrot cake!

and now the problem is, since the popular cream cheese frosting too sweet, i stuck!
i  want the not too sweet cream cheese frosting, so i reduce A LOT sugar. they used to put 2-6cups sugar in a recipe and seriously, i can't handle it! TOO MUCH! after reduce sugar, i find my frosting too watery even it tastes delicious :(

then i remembered that i made red velvet whoopi pie before with cream cheese filling. i used merrywhip to make the cream cheese firm. and, stright away, i take merrywhip out from the refrigerator and thaw it until reach room temperature. i mix with my cream cheese mixture and THX GOD it turned out perfectly!!!

CHOCOLATE HEAVEN TART

2 days ago when i shopped for the ingredients, i saw a jar of nutella. *mouthwatering
then i remember that i haven't figure out what to make for my former bosses which i want to meet this saturday. so, i took a jar of nutella, ferrero rocher, loacker napolitaner, and ritter sport hazelnut. what a HAZELNUT!!!!
i really wish that in Indonesia, they have affordable hazelnut. they are so yummy!!!

when i arrive home, i browsed the internet right away to find a right recipe for this fabulous ingredients. but i cant even find  one. i mean, there's a lot of good recipe, but i dont think i want to follow that recipe. so as usual, i use my instinct.

i want to make 4 layer pie.
1st layer is dark chocolate
2nd layer is loacker crumb mix with HAZELNUT chocolate
3rd layer is HAZELNUT chocolate cream
4rd layer is HAZELNUT chocolate ganache with nut\
and i put a ferrero rocher on the top to make it sexy

i chilled it for an hour, and when i cut it, i can't stop myself to eat the first cut.
OMG, it's HEAVEN!!!!
and this morning, i ate it as my breakfast! i just can't have enough.
that's why i named it CHOCOLATE HEAVEN TART

STRAWBERRY CHEESE CAKE

hari minggu kemarin dapat pesanan dari seorang teman. minta dibuatkan strawberry cheese cake untuk kue ultah sang pacar. kue-nya rencananya akan diantar ke BSD. duh, jauh bener, takut lumer atau agak berantakan. akhirnya diusulkan sebuah ide, menggunakan crust di seluruh lapisan cheese cake-nya. tapi karena biasanya bikin cheese cake cuma pake crust di bagian bawah aja, makanya hari ini memutuskan untuk mencoba crust-nya dulu. tapi pake loyang pie kecil aja, loyang pie ukuran 20cm dengan tinggi 3cm.

mocha chocolate cake

kungkung lagi dioperasi. kalo nunggu di RS, bisa mondar mandir kaya kebakaran jenggot. khawatir berlebihan. but i know, he'll be fine. :)

jadinya pulang ke rumah. niat awalnya mau tidur, tapi ga bisa tidur :(
akhrinya baca2 buku resep. menemukan buku resep yang dibelikan @forrealicia as my birthday gift last year.



dicari cari resep yang enak, tiba2 keinget kemarin sempet baca tentang mocha chocolate cake.

langsung di bolak balik halamannya, akhirnya ketemu. bahan - bahannya ringkes banget. cuma coklat, butter, gula, telur, tepung, dan kopi.

semua bahan beres, dikocok dan di fold, adonan siap. tiba - tiba *JRENGGGGG
oven lupa dinyalahin. SELESAI!!!! (baca-kebiasaan buruk)
nunggu lagi oven panas kira2 setengah jam.
adonan dituang ke loyang spring form yang baru beli di ace hardware.
masukin ke oven, ditinggal mandi,
pas turun ganti ke api atas, voila, mocha chocolate cake.
pas keluar, wangi banget. ditunggu dingin sebentar, lepasin dari pinggiran loyang.
potongan pertama masih anget, ENAK BANGET, coklatnya kerasa banget dengan rasa kopi di akhirnya apalagi kalo dirumah ada susu putih, pasti makin enak.

abis ini, langsung dipotong potong buat dibagiin ke sanak keluarga yang jaga di RS

kalo mau pesen juga bisa loh Rp. 75.000,-/loyang ukuran 24cm. tingginya 2-3cm.
kalo mau dipakaikan topping/frosting, bisa juga. nanti harga disesuaikan. yang pasti enak & ga mahal :P

segelas kehangatan

sudah seminggu, kakek tercinta yang biasa dipanggil kung-kung, terbaring penuh semangat di rumah sakit. dengan berbagai tingkahnya membuat cucu/anaknya yang jaga malam tidak tidur alias bergadang.
jadi dengan segala cara pula kita menjaga kesehatan supaya ga ikut - ikutan sakit.
mulai dari jadwal, 1 hari jaga pagi besoknya menginap malam dan seterusnya.
makanan pun mulai dipilah pilih, jangan terlalu banyak gorengan atau jajan di luar, tentunya minum air putih yang banyak.

secara senin kemarin bikin pesanan kue dan ada lebih, sepupu sepupu yang ikut menjaga kungkung akhirnya mampir ke rumah dan yippieeeeeeee kue sisa-nya habis dimakanin. ditambah kemarin ini sempet bikin manggo yoghurt ice cream yang ga sempet diabadikan camera :(
rasanya seneng banget pada makanin dan bilang enak terus nambah lagi. bikin semangat!!!! :D

lanjut ke inti pembicaraan, karena tidur selalu kurang setiap hari, akhirnya kemarin nyeduh ginseng & rose buds health tea yang mami beli di singapore kemarin ini. teh-nya seru banget, karena didalemnya banyak bunga - bunganya gitu. terutama chrysanthemum. my favorite flower drink!!!! abis minum tea ini seger banget, sampe2 mata melek terus, ga bisa tidur siang :( hahaha...

selain sehatnya, ada kesenangan tersendiri ngeliatin bunga2 yang ada di teh ini mekar setelah diseduh :)


lucu kan? rasanya enak juga. apalagi minumnya anget anget di kamar yang dingin. *tersenyum seperti di iklan iklan

soalnya penggunaan chochochipnya yang sangat banyak dan adonan yang didiamkan selama 3hari, membuat seluruh bahan meresap sempurna dan menghasilkan cookie yang gurih dan coklat banget.

triple chocolate cake

sebenarnya ini orderan dari minggu lalu, tapi karena yang bersangkutan lagi retreat dengan sekolah, jadilah diambil hari senin sesuai perjanjian. pesanan ini ditujukan untuk teman baik sabrina di smp yang berjumlah 5 orang.

pemesannya ga neko - neko. dia hanya memberikan budget maksimal 50rb/item. terserah mau dibuatkan apa. setelah pikir panjang, jadilah triple chocolate cake yang berukuran kecil, menggunakan loyang brownies.

terdiri dari 4layer.
paling bawah adalah chocolate ckae, diisi dengen chocolate filling, diatasnya ditambah chocolate cake lagi, dan seluruh lapisan kue-nya disiram chocolate ganache yang mengkilat. hiasannya didominasi warna pink, karena sabrina yang berulang tahun suka warna pink.

sayangnya cake-nya difoto menggunakan foto bb aja, soalnya buru - buru sudah diambil. :(
tapi malamnya pas bbm pemesanan, rasanya senang banget, karena dia suka.
